Kopanisti: Roasted Red Pepper Dip

A roasted red pepper dip so good, you will want to slather it on everything!  Known as Kopanisti in Greece, it's salty, smoky and utterly addictive! Jarred red peppers, combined with good feta and mint, it's one of those dips you can pretty much whip up on a moment's notice. Perfect by itself with some pita or crackers or as part of a larger appetizer spread, this easy dip recipe is one you'll make  any excuse to make - it's that good!

You can never have too many dip recipes IMO. From the basics like this cheesy onion dip, or this crack corn dip,  to more exotic offerings like this Muhammara Dip, there is something irresistible about them, don't you think??

And this Kopanisti? Definitely irresistible!

Ingredients you will need to make this Roasted Red Pepper Dip:

  • Jarred roasted red bell peppers
  • feta cheese - preferably one that is packed in brine.
  • High-quality olive oil
  • fresh garlic
  • lemon juice
  • fresh mint leaves

This dip recipe has a short list of ingredients so it's important to use high-quality ingredients!  If at all possible, search out feta packed in brine for this recipe - the cheese is moister and has a much better flavor than feta crumbles or feta blocks packaged in plastic!

Fresh mint: I know you might be tempted to reduce the amount of mint or leave it out altogether - but trust me - don't! The mint balances the stronger flavors of the feta and roasted red peppers - without it the dip tastes heavy and flat!

So what is Kopanisti?

The word Kopanisti refers to a spicy, peppery cheese that is a specialty of the island of Mykonos. Since this dip recipe mimics the flavor of the cheese, it's referred to as Kopanisti dip!

Step #1 - Add all the ingredients to a food processor and process until the dip is smooth and creamy!

Step #2: Spoon the roasted red pepper dip into a serving bowl and enjoy!

Ingredients

  • 12 oz. feta cheese drained and cubed
  • 4 oz. roasted red bell peppers drained
  • 1 cup fresh mint leaves
  • ¼ cup olive oil
  • 3 small cloves garlic
  • 2 Tbsp. fresh lemon juice
  • ¼ tsp. red pepper flakes

Instructions

  • Combine all the ingredients in the bowl of a food processor and pulse until the ingredients are combined. Continue to pulse until the mixture is smooth but still retains some texture.
  • Taste and add more lemon juice or pepper if needed.

Recipe Notes

Recipe Notes:
If at all possible, use a feta cheese that has been packed in brine. Good sources for finding feta packed in brine include Trader Joe's, cheese specialty stores and middle eastern markets. 
The dip can be made several days in advance and stored in a covered container in the refrigerator. Let the dip come to room temperature before serving. 
I used jarred, roasted red peppers in this dip recipe, but if you have fresh peppers, you definitely can roast them and use them in this dip!

    My husband & I have had this dip before @ one our favorite restaurants & wanted to make to have at home, but they serve it warm. have you ever had it or made it that way?
