Fresh Blackberry Bramble Cocktail

Sweet, refreshing and simple to make, this blackberry bramble cocktail definitely belongs on your summer cocktail list! Updating the classic bramble recipe, this summer cocktail adds fresh blackberries and a thyme and rosemary infused simple syrup to this basic bramble drink. 
I had a version of this blackberry bramble cocktail at a local restaurant, where it was called "Summer in Provence" - lovely isn't it?  But rest assured, putting the proverbial "lipstick on a pig" doesn't change the fact that this blackberry bramble drink is  basically a smash. A "smash" is an  incredibly easy cocktail to make - even for a crowd. Like the Contessa, this blackberry bramble  is high on my summer cocktail rotation list for many reasons. This bramble drink is  light, refreshing and colorful - all the things you want on a sweltering summer day.Ok, even if the day isn't sweltering, you are still going to want to be sipping this... trust me.

This Summer in Provence Cocktail is a smash! Crushed blackberries. gin, lemon juice and an infused rosemary thyme syrup make for easy summer sipping.

So what is a bramble?

In Britain a "bramble" refers to a prickly, scrambling type of shrub or vine - and typically refers to a blackberry bush. The bramble cocktail is an old drink, dating back to the 1890's. Made with gin, lemon juice, simple syrup and blackberry liqueur, this bramble drink has once again become popular with bartenders and now almost always made with fresh blackberries!

How to Make the Blackberry Bramble Cocktail:

It seriously couldn't be easier to make this Blackberry bramble drink ...

  • Make a simple syrup and infuse it with fresh thyme and rosemary
  • juice a lemon
  • Pull out your favorite bottle of gin. I like to use Hendrick's for this - especially if juniper is not your favorite flavor!
  • Muddle the blackberries in a glass and shake the gin, lemon juice and infused simple syrup.
  • Add some ice to the glass and pour the gin mixture on top.

Summer in Provence Cocktail

Ingredients

  • 4 blackberries
  • 2 oz. gin Hendricks is lovely in this
  • 1 oz. fresh lemon juice
  • ¾ oz. Rosemary Thyme syrup
  • 1 small rosemary sprig optional
  • Rosemary Thyme syrup
  • 1 cup water
  • 1 cup sugar
  • 4 fresh rosemary sprigs
  • 5 fresh thyme sprigs

Instructions

  • Crush 8 ice cubes into pieces about ½ inch big.
  • Store in freezer until ready to use.
  • Place the blackberries in the bottom of a rocks glass. Smash with a muddler or the back of a spoon.
  • In a cocktail shaker, place the gin, lemon juice, and Rosemary Thyme Syrup.
  • Add ice (enough to cover the liquids ) and shake for 30 seconds until the shaker is cold.
  • Add the crushed ice to the glass with the smashed blackberries.
  • Strain the cocktail over the blackberries.
  • Garnish with a rosemary sprig.
  • Rosemary Thyme Syrup
  • Combine the sugar, water, rosemary and thyme sprigs.
  • Heat over medium high heat until the sugar is completely dissolved,stirring frequently.
  • Remove from the heat and let the herbs steep for 15 minutes.
  • Strain the syrup into a clean glass jar.
  • Store in the refrigerator.
  • The syrup will last about 2 weeks.
