Last week I introduced you to the Pomelo, my new citrusy BFF with this Pomelo, Citrus and Mint salad. As I was eating the salad, I kept thinking that the pomelo juice would make a darn tasty cocktail, but what cocktail? Now that was the question! So, after a "google surfing" session, I learned a couple of surprising facts. One, there are less than 100 pomelo cocktails on Pinterest!!!
This is utterly shocking to me. Shocking....
Second, that we really don't know the true origins of the margarita. Honestly people, how can we not know this???

The Origins of the Margarita
Now why there aren't a gazillion pomelo cocktail recipes on Pinterest I honestly can't tell you.
But as to the origins of the Margarita... well, that is something I can tell you something about!! Like most hugely popular inventions, there is no shortage of folks wanting to claim credit for creating the margarita - so there are several versions of how this drink came into being. The most likely story however, is this. In 1938, Carlos, "Danny" Herrera, the owner of a Tijuana-area restaurant called Rancho La Gloria, created this drink for one of his customers, an aspiring actress named Marjorie King who allegedly was allergic to all hard alcohol other than tequila. Since a straight shot wasn't going to cut it, he combined the elements of the shot (lime and salt) with a little triple sec to make the tequila palatable.
Well, I am happy to say that Pomelo and Mint Margarita is more than just palatable - it is delicious! Bright and refreshing, you might find yourself humming Margaritaville... and since this Pomelo and Mint Margarita doesn't include a salted rim, no worries about "finding that lost shaker of salt"....

Pomelo and Mint Margarita
One added bonus in this cocktail is that since pomelos are rather large, you will only need 1 for two cocktails! This also works well as a non alcoholic drink!

Ingredients
- 2 oz. freshly squeezed pomelo juice about ½ of a pomelo
- 1 ½ oz. Blano tequila I used Patron Silver
- ½ oz. agave syrup mix 1 Tablespoon agave nectar with 1 Tablespoon of water and stir or shake to combine
- 4 fresh mint leaves
Instructions
- Combine the pomelo juice, tequila agave syrup and mint leaves in a shaker. Add ice. Shake for 30 - 40 seconds until shaker is cold. Using a fine mesh strainer, strain cocktail into a rocks glass over ice.
