Mango Margaritas!! Happy Cinco de Mayo!!

It may not be a big deal where you live, but in Southern California Cinco de Mayo is a big deal - the stores have festive displays of avocados, tomatoes, limes  and of course,  cerveza. Virtually every restaurant in town has some sort of celebration - regardless of what type of food they serve  -a local Tapas bar is advertising that they will be serving $1 tacos all night - see what I mean?? tacos!!!   Now this could of course be because Southern California has a large Mexican population. OR simply because Californio's love any excuse for a party - and I am goin' with the latter.  My evidence?? St. Patrick's Day. Yep,  we all happily down big platters of Corned beef, cabbage and Guinness (or green beer!!) whether we have a drop of Irish blood or not!
Me, I don't have a drop of Mexican blood in my veins - but that minor detail isn't going to stop me from celebrating in style - starting with a luscious Mango Margarita which is just the thing to go with some spicy salsa and chips. So feliz  Cinco de Mayo!!!

Ingredients

  • 2 12 oz packages frozen mango chunks
  • ½ cup fresh orange juice
  • ½ cup fresh lime juice
  • ¼ to ½ cup sugar start with smaller amount and add more if needed
  • 4 oz. tequila
  • 2 oz. triple sec
  • lime wedges
  • 1 cup fresh mint leaves
  • 1 cup sea salt
  • In a blender combine the first 6 ingredients until smooth. Refrigerate. Finely mince the mint leaves and mix with the sea salt and place on a small flat plate. To serve run a lime wedge around the rim of a cocktail glass and dip into the mint salt until the rim is nicely coated. Fill glass with margarita and enjoy!!

Instructions

  • In a blender combine the first 6 ingredients until smooth. Refrigerate. Finely mince the mint leaves and mix with the sea salt and place on a small flat plate. To serve, run a lime wedge around the rim of a cocktail glass and dip into the mint salt until the rim is nicely coated. Fill glass with margarita and enjoy!!
