Kopanisti - Roasted Red Pepper Dip

A roasted red pepper dip so good, you will want to slather it on everything!  Known as Kopanisti in Greece, it's salty, smoky and utterly addictive! feta and jarred red peppers, combined with good feta and mint, it's one of those dips you can pretty much whip up on a moment's notice.

Ingredients

  • 12 oz. feta cheese drained and cubed
  • 4 oz. roasted red bell peppers drained
  • 1 cup fresh mint leaves
  • ¼ cup olive oil
  • 3 small cloves garlic
  • 2 Tbsp. fresh lemon juice
  • ¼ tsp. red pepper flakes

Instructions

  • Combine all the ingredients in the bowl of a food processor and pulse until the ingredients are combined. Continue to pulse until the mixture is smooth but still retains some texture.
  • Taste and add more lemon juice or pepper if needed.

Recipe Notes:
If at all possible, use a feta cheese that has been packed in brine. Good sources for finding feta packed in brine include Trader Joe's, cheese specialty stores and middle eastern markets
The dip can be made several days in advance and stored in a covered container in the refrigerator. Let the dip come to room temperature before serving. 
I used jarred, roasted red peppers in this dip recipe, but if you have fresh peppers, you definitely can roast them and use them in this dip!
