“If you serve something with lemon and something with chocolate for dessert, you’ve got 90% of the population covered”. Excellent advice that I have found is very true. So, when deciding upon a dessert to go with my Superbowl Sliders I thought “something with lemon” would be perfect – and let me tell you, these Lemon Crunch Bars are pretty darn perfect, if I do say so myself!!! They are incredibly easy to make with a terrific balance between the crumbly chewiness of the streusel and the slightly tart, sweet and creamy filling. With these and my Crispy Chocolate and Coconut Cookies in your playbook you should have no trouble scoring at least one touchdown during the Superbowl – go team!!!

Lemon Crunch Bars
(adapted from Southern Living Christmas Cookies)
(makes 18 bars)
- 1 – 15 oz. can reduced fat sweetened condensed milk
- zested rind of 1 lemon
- 1/2 cup fresh lemon juice
- 2/3 cup butter, softened
- 1 cup firmly packed dark brown sugar
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 cup old fashioned oats
Directions:
- Pre heat the oven to 350 degrees. Spray a 7 x 11 inch pyrex or other casserole dish with cooking spray. Set aside.
- In a medium bowl, combine the condensed milk, lemon juice and lemon zest. Set aside.
- In another bowl, combine the flours, salt and baking powder. Set aside.
- In a large mixing bowl, cream the butter. Add the sugar and beat until the mixture is light and fluffy.
- Add the flour mixture to the butter and mix until the combination resembles coarse meal.
- Stir in the oats.
- Press half of the flour and oat mixture into the bottom of the prepared dish. Pour in the reserved lemon filling evenly on top. Sprinkle the remaining oat mixture on top of the lemon filling.
- Bake in a 350 degree oven for approximately 25 minutes or until the edges are browned.
- Cool in the pan and then refrigerate.
- When cold, cut into bars about 1 1/2 x 1 1/2 inches. Serve.
